Ingredients for Quinoa Cakes (makes about 6):
- 1/2 Cup of shredded coconut
- 1/2 Cup of quinoa flakes
- 1/4 teaspoon of cinnamon
- A pinch of nutmeg
- 1/4 Teaspoon of baking powder
- 1.5 Bananas (mushed)
Put all ingredients in a mixing bowl and mix until in a soft dough
Cook on 180 degrees (Celsius) for about 20 minutes or until slightly brown on the top. Leave to cool for around 15 minutes and serve with dairy free coconut yoghurt and cinnamon.
Ingredients for ‘Ice Cream’ (makes about 8 serves):
- 3 Cups of frozen berries
- 2 Frozen bananas
- 1 Bottle of coconut water (450ml)
Blend all ingredients together in a food processor or blender… much easier with a food processor
